The dairy industry is growing fast almost throughout Central America. Last year its output grew by 5 per cent.
According to the regional federation of the dairy industry, growth has surged by 18 percent in Costa Rica and 14 percent in El Salvador, 13 in Guatemala, 6 in Panama and 4 percent in Honduras. Growth was apparently negative in Nicaragua but there are no reliable figures yet available.
Costa Rica is the region's number one in terms of both production and consumption, at 681 billion liters a year.
